Speciaal geschikt voor zachte, lichte bieren met een neutraal gistprofiel. Werkt ook goed voor zwaardere bieren waar een zacht mondgevoel is gewenst en waar nootachtige, kruidige en aardeachtige hop- en moutkarakters gewenst zijn. Deze gist is zeer flocculent en geeft weinig autolyse. Lijkt erg op de WhiteLabs WLP007.
Vergistingskarakteristieken: Start meestal snel met activiteit tussen 12 en 24 uur. Geeft veel schuim. Breed temperatuurinterval en doet het goed bij lagere temperaturen. Uitstekende keus als neutrale gist voor delicate, lichte, moutige ales, maar ook voor sterkere moutige ales.
Aroma karakteristieken: Hop en mout worden versterkt en neigen richting aardeachtig, notig, sinaasappelschil en milde kruiden. Esters zullen bijna afwezig zijn in bieren met een normale sterkte bij vergisting bij lage temperatuur (lager dan 20°C).
Smaak en mondgevoel: Droge afdronk, maar lichte bieren worden niet dun of waterig. Zacht mondgevoel.
Hoogalcoholische bieren: Estervorming is hoger in hoogalcoholische bieren, maar het karakter van de esters is pleziering met rijpe appel en peer en licht banaan. Het bier zal droog zijn, maar enige mout zoetigheid blijft aanwezig, samen met moutigheid en moutcomplexiteit. Geeft alcoholwarmte, maar geen branderigheid.</NOTES>

<NOTES>Beierse Weizengist geeft de karakteristieke banaan- en kruidnagelsmaken. Geeft een zijdezacht mondgevoel en een volle body.
Klassieke bovengist geschikt voor Duitse Weizenbieren, maar ook Belgisch Witbier. Flocculeert zeer langzaam en het zuivere gistaroma maakt deze gist ideaal voor tarwebieren waar de gist meegeschonken wordt. Geeft een licht zoet tot droog bier met een medium body en een zacht mondgevoel met de karakterestieke banaan- en kruidnagelsmaak. Lijkt erg op de Wyeast 3638 Bavarian Wheat.
Vergistingskarakteristieken: vergisting start tussen 24 en 36 uur en geeft een stevig schuim. De flocculatie is langzaam en geeft uiteindelijk een matig helder bier. Vergist snel: bieren vergist met deze gist kunnen binnen 10 dagen drinkklaar zijn.
Aromakarakteristieken: veel banaan- en kruidnagelesters, gebalanceerd door kruidnagel- en kaneelachtige fenolen. Deze aroma's overweldigen al snel mout- en hopkarakter in het bier. Alleen intense chocolade- of geroosterde moutaroma's kunnen nog doorkomen.
Smaak en mondgevoel: hoewel deze gist niet ver doorgist, zal het bier niet zoet smaken. Het heeft wel een zacht, romig mondgevoel en een rijke body. Een beetje zurigheid die deze gist geeft versterkt de tarwekarakteristieken uit de tarwemout.
Hoogalcoholische bieren: in hoogalcoholische bieren worden de fenolen wat rokerig en de esters komen nog sterker naar voren. Omdat deze gist niet ver doorgist kan het bier zoet worden.</NOTES>

Daardoor is deze gist geschikt voor veel Belgische bierstijlen, waaronder quadrupels tot wel 14% alcohol. yeast is highly attenuative and has a high ethanol tolerance that makes it ideal for creating most Belgian beer styles, including Quadrupel styles of up to 14% ABV.
Vergistingskarakteristieken: vergist langzaam, vooral bij hoogalcoholische bieren. Start niet snel. Deze gist gist gemakkelijk door tot onder de 1,010 en bij lichte bieren onder de 1,005. Warmere vergistingstemperaturen aan het eind van de vergisting tot 25 graden worden aangeraden om hoogalcoholische bieren uit te laten vergisten.

Gist ver door, maar is neutraal in de meeste omstandigheden en worten. Produceert wat zurigheid, waardoor citrushoppen sterk naar voren komen. Accentueert ook geroosterde moutkarakteristieken. Mangrove Jack’s US West Coast Ale Yeast M44 lijkt sterk op Wyeast 1764 Pacman Yeast van de Rogue brouwerij.
Vergistingskarakteristieken: start snel, maar vergist langzaam. Eind sg wordt meestal pas na twee weken bereikt. Geduld tijdens de rijping wordt beloond met een mooi droog bier met neutrale gistkarakteristieken.
Aromakarakteristieken: zeer neutrale gist, zelfs bij wat hogere temperatuur en zwaarder wort. Amerikaanse hopkarakteristieken worden versterkt, evenals geroosterde mout aroma's.
Smaak en mondgevoel: bieren hebben een droge en verfrissende nasmaak. Zeer lichte bieren kunnen wat dun worden, gebruik dan hogere maischtemperaturen.
Hoogalcoholische bieren: de gist blijft neutraal en produceert wat zuur, wat de alcohol en mout uitbalanceert. Deze gist is uitstekend in sterke bieren met een eenvoudige moutstort. Alcohol komt sterk door, zonder scherp te worden.</NOTES>

Deze gist is beroemd voor de verfrissende, droge, moutige en hoppige ales die hij produceert. Burton Union Yeast vergist snel en geeft lichte en delicate peeresters. Wanneer hop- en moutaroma's sterker zijn, komt het gistkarakter minder sterk naar voren. In bieren met een minder sterk moutkarakter zullen hop en gist meer naar voren komen. Bieren rijpen snel en zijn binnen 3 weken drinkklaar. Mangrove Jack’s Burton Union Yeast M79 lijkt sterk op Wyeast 1275 Thames Valley.
Vergistingskarakteristieken: start zeer snel: 12-24 uur tot high krausen en geeft een massieve, dikke schuimlaag. Geef deze gist dus genoeg kopruimte in het gistvat! Bereikt eind sg binnen een week, tenzij het wort zeer zwaar is. Produceert licht zwavel, wat bij rijping verdwijnt.
Aromakarakteristieken: wat peer-, soms aardbei- of kiwi-achtige aroma's. Delicate mout en hoparoma's overleven de vergisting. Bij veel hop- of moutaroma's zakt het gistkarakter terug naar de achtergrond.
Smaak en mondgevoel: neutraal en zacht. Bier wordt matig droog met een goede body.
Hoogalcoholische bieren: uitstekende gist voor sterke ales die geen sterke fruitigheid en zoetigheid vereisen.</NOTES>

Bohemian Lager gist wordt gekarakteriseerd door de droge en cleane smaak, typisch voor traditionele Tjechische bieren. Met zeer lichte fruitige tonen geeft deze gist verfrissend bier met een uitgesproken hopkarakter. Hoewel rijk en vol, zullen de bieren niet zoet worden, maar hebben wel een vol moutkarakter in de nasmaak. Laat de bieren 6 tot 8 weken koud lageren voor het beste resultaat. Lijkt op Wyeast 2124 Bohemian Lager.
Vergistingskarakteristieken: start behoorlijk snel voor een ondergister. Bereikt het eind sg binnen 2 weken, behalve bij zwaardere bieren.
Aromakarakteristieken: klassieke Boheemse pilskarakteristieken mogen worden verwacht.
Smaak en mondgevoel: aromahop en (pils)mout worden versterkt, gesteund door een volle body. Delicate moutsmaken worden behouden. Bieren worden over het algemeen rijk en vol, zonder dat zij zwaar smaken.
Hoogalcoholische bieren: deze gist doet het redelijk goed in zwaar wort, maar kan maximaal 9% alcohol aan. Bieren met meer dan 7% alcohol worden wat te zoet en scherpe alcoholsmaken kunnen doorkomen.</NOTES>
